Watermelon Tofu Feta Cheese Salad

Ingredients

Salad: 

  • 4 cups arugula
  • 1 cup seedless watermelon, cubed
  • 1 avocado, cubed
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup sliced roasted almonds
  • 1 cup blueberries 
  • 1 tbsp fresh dill, chopped 
  • 2 tbsp fresh basil, sliced

Tofu feta: 

  • 1 block firm tofu, cubed
  • 1 cup apple cider vinegar
  • 1 cup water
  • 4 tbsp oregano
  • 4 tbsp dill
  • basil leaves (optional)
  • tarragon (optional)gf
  • salt/pepper as desired

Instructions

  1. Tofu feta: throw everythig in a jar, set aside. The longer it marinates the better!
  2. Salad: Throw everything in a bowl and top with balsamic glaze! Enjoy!
