Vegan Grilled Sweet Corn and Peach Salad with basil dressing

Salad:

  • 2 tbsp oil
  • 5 ears corn
  • 1/3 cup red onion, sliced thin
  • 1 peach, sliced

Basil dressing: 

  • 2 tbsp olive oil
  • 1/2 cup vegan mayo
  • 1 cup fresh basil 15-20 leaves, finely chopped
  • 1 clove garlic, minced
  • 2 scallions, chopped
  • 1/2 tsp salt

 


Instructions

  1. Prepare a grill for medium heat. Brush the corn and sliced peaches with oil, season with salt.
  2. Grill corn, turning occasionally, until corn is charred, 10–12 minutes for corn. Peaches should take 7 minutes (3.5 mins on each side). Transfer to a platter and let cool slightly before shucking corn.
  3. Cut the kernels from the cobb in a bowl. Roughly chop the grilled peaches leaving 2 to place on top.
  4. Dressing: Add all the ingredients to a small dish, combine. Toss and coat the corn/peach mixture and red onion, in the dressing. Garnish with additional salt, grilled peaches and basil.
