Quick and easy Texas Caviar!


Ingredients

Scale
  • 2 avocados, chopped
  • 1/2 can black beans, drained and rinsed
  • 1/2 can corn, drained
  • 1 cup red onion, diced
  • 3 roma tomatoes, chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juice of, freshly squeezed
  • 1 tsp coarse salt
  • 1 tbsp olive oil
  • 1/2 cup apple cider vinegar
  • 1/2 cup pickled jalapeños, chopped (or 1/2 jalapeño pepper, chopped)
  • 1 can black eyed peas, drained, rinsed
  • 1 small red bell pepper
  • 1 small green bell pepper
  • 1/2 tsp chile powder (optional)

Instructions

  1. Mix together all of the above ingredients, chill in the fridge for a few hours, then serve with tortilla chips! All of the ingredients can be modified to fit your personal preference! I recommend the lime juice as it helps to prevent the avocados from browning.
