I can’t even begin to tell you how long I’ve dreamt about doing this recipe. I’ve done chocolate cups when those were somewhat of a new concept and all over Pinterest. However, I found them to be underwhelming and gave up on future recipes.
If you’re well versed on vegan chocolate, you know that finding vegan white chocolate in particular is rare. Finding one that is of high quality is even more rare. I’ve been using a brand off of Amazon for the past few years and while I thought it was an issue to get this chocolate to melt, come to find out.. it’s not!
What I love about this recipe is that it’s a handful of ingredients, effortless, great for entertaining, gifts, or just to splurge!, can be made into whatever shape you like, the middle isn’t overly sweet, perf for fall, can easily be made in bulk, and non vegan approved!

Melt coconut oil in the microwave. Pour over the chocolate chips. Combine. Place in the microwave for 10 second intervals, stirring in-between until fully melted. using silicone muffin tins pour the melted chocolate into the bottoms. Place in the fridge for 5 minutes to cool. Combine all of the ingredients for the filling. Place 1 tbsp in the middle of the cup trying to avoid spreading it all the way to the edges. Pour melted chocolate over the tops and chill again for 20 minutes. Keep in the fridge unless serving!
