  • Yield: 8 large cookies 1x

  • 1 cup flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vegan butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup applesauce
  • 1 teaspoon vanilla
  • 1 1 /2 cups old fashioned rolled oats
  • 1 cup golden raisins

  1. In a large bowl whisk together the flour, salt, baking soda, and cinnamon. Set aside.
  2. In the bowl of a standing mixer combine the vegan butter, brown sugar, and granulated sugar. Cream together for 3 minutes until fully combined and fluffy.
  3. Add the applesauce and vanilla extract and combine again scraping down the sides.
  4. Now add the flour mixture in segments while combining on low.
  5. Gently fold in the oats and raisins.
  6. Cover the cookie dough tightly and refrigerate for 30 minutes.
  7. Preheat oven to 350 degrees. Line baking sheet with parchment paper.
  8. Once chilled, take 2 tbsp or more of the cookie dough and roll into a ball. Lightly press them down. The cookies will spread so just gently.
  9. Bake for 10-12 minutes or until the edges of the cookies are lightly golden brown and the top is set. Remove from oven and cool on baking sheet for 5 minutes. Then transfer to a cooling rack to finish.
