- Preheat oven to 425 degrees. Rinse and cube sweet potatoes. Place on a 2 baking sheets and drizzle with olive oil. Toss and coat. Spread out evenly and sprinkle with kosher salt. Make sure they are spread out enough, if not they will just steam and not get crispy.
- Bake for 20-25 minutes tossing the potatoes mid bake and rotating the pan.
- In a small dish whisk and combine all the sauce ingredients.
- Remove from heat and toss and coat in the sauce. Garnish with additional cilantro and lime zest!
