Since the Fourth of July is coming in days, I wanted to whip up some quick and easy concepts from desserts to snacks and more. When thinking of the next recipe it occurred to me that I’ve never done a staple Pico de Gallo! This iconic dish is typically seen at countless restaurants and sadly overlooked. I can’t even begin to tell you how many times I heard people order and say, “hold the pico”. As you would imagine, I’m not one of those to ever pass on the pico.
I personally love the flavor combination and what it adds to countless dishes. It’s slightly sweet, but spicy and veggie packed which is my favorite! I find that Pico de Gallo is a little similar to salsa, but more on the rustic side offering more texture and of course, it’s just so good!
So why Pico? This dish is great for everything from nachos to tacos, sandwiches or simply enjoyed by itself! You’re less likely to find store bought pico and if you do, it’s probably not fresh. This works in your favor, because it’s so easy and refreshing when homemade! This recipe is quick, easy, features minimal ingredients, is perfect for any season, great for entertaining, and affordable!

Wash and prep all the ingredients. Throw together in a bowl. Cover and allow to chill for 15 minutes so the flavors combine. Enjoy with tortilla chips. Adjust seasonings as desired. Pro tip: When dicing tomatoes, cut in half, and scoop out the insides with a spoon. The more finely chopped, the better the result! (using kitchen shears works wonders!)
