Hello & Happy Thursday!!
If there is one think I could eat by the bucket.. 
It’s guacamole!! (or well any Mexican food for that matter)
I find that the cuisine packs tons of flavor, lime, cilantro, heat.. and well basically all of my favorites. Fast foward to today, I love to mix up everything I make and break the mold with new combinations. 
Because life is too short for everyday eats!
For many people messing with the standard guacamole recipe is a huge no no. However, whether you’re all about healthy eats or authentic mexican eats, this recipe was a game changer and absolutely competes with the classic recipe. 

What I love about this recipe is 100 percent everything! It packs more color, more texture, more nutrients, a hint of sweet, a hint of fire, a lightness with the mint, a tartness with the tofu feta and just all around is such a huge hit!

Guacamole with Mango, Mint, and Feta

  • 4 ripe avocados, diced
  • 1 ripe mango, diced
  • 4 green onions, sliced thinly
  • 1 small red onion, diced
  • Juice one lime
  • ½ cup fresh minced cilantro
  • 1 jalapeño, finely minced (remove the seeds and membranes to keep it milder)
  • Salt and pepper, to taste
  • 6 to 10 mint leaves sliced
  • Tofu Feta:
  • 1 block tofu, firm, chopped into cubes
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1/3 cup olive oil
  • 1/3 cup fresh dill
  • 1/3 cup fresh oregano


  1. Tofu feta: Combine all the ingredients in a large jar, store for at least 24hrs to firm up the tofu
  2. Guacamole: Combine all ingredients in a large bowl. Season to taste with salt and pepper. Serve immediately with tortilla chips. To store without browning, place plastic wrap on top of guacamole, and press down so it touches the surface—so no air can touch the guacamole.
